Linguine with Albacore Solid Tuna


Ingredients


(Serves 2-3)

1 can Ocean Naturals Albacore or Yellowfin Solid Tuna in Olive Oil
2 cups Sliced Yellow Onions
2 tbsp Capers
6 Whole Garlic Cloves Crushed
¼ tsp Red Chili Flakes
1 cup Sweet Red or Yellow Cherry Tomatoes Cut in Half
2 tsp Parsley Chopped
1 cup Clam Juice (fresh or canned)
4 tsp Extra Virgin Olive Oil
8oz Dried Linguine pasta

Instructions


Bring a large saucepan of water to the boil and add plenty of salt.

Meanwhile, put a large pan on medium-high heat. Once hot, add olive oil, onion, capers, garlic and cook until lightly golden brown. Once the onions are caramelized, add the tomatoes, parsley, chili flakes and clam juice. Set heat to medium and reduce sauce by half until thickened.

Cook pasta as per packet instructions, than add to the tomato sauce and turn the heat back on to medium heat. Add your can of tuna and gently toss all ingredients together. Once the sauce starts to simmer, turn off the heat. If the pasta sauce seems a little thick, add a splash of water.

Season with salt. Then, serve immediately with the remaining parsley sprinkled over and a drizzle of extra virgin olive oil.
