Spring Rolls with Albacore Solid Tuna


(Serves 2)

1 can Ocean Naturals Albacore or Yellowfin Solid Tuna (drain olive oil)
2 Sheets Rice Paper
¼ cup Julienne Carrot
¼ cup Julienne Cucumber
8-10 Large basil leaves
8-10 Mint leaves

Asian Mayonnaise
1 Tbsp. Mayonnaise
2 tsp Sriracha Chili Sauce
2 tsp Sweet Chili Sauce

Dipping Sauce
1 tbsp. Soy Sauce
2 tbsp Rice Wine Vinegar
¼ tsp Red Chili Flakes
1 tbsp White Sugar


Mix tuna with the Asian mayonnaise.

To assemble, dip rice paper in cold water for 1 second and place on a smooth surface. Once the rice paper starts to soften, place in the following order the basil, mint, carrots, cucumber and tuna mixture. Gently roll until fully wrapped, then slice into 4 pieces. Repeat with the remaining rice paper and ingredients.

Serve with the dipping sauce.
