Stuffed Jalapenos with Albacore Solid Tuna


(Serves 2 – 4)

1 can Ocean Naturals Albacore or Yellowfin Solid Tuna in Olive Oil
4 Jalapenos
2 tbsp Olive Oil
2 tbsp Fine Chopped Red Onions
1 tbsp Fresh Lemon Juice
2 tbsp Mayonnaise
1 tbsp Chopped Pepperoncini
2 tbsp Chopped Celery Hearts


Bring a pot of water to the boil, then add jalapeno and boil for 2-4 minutes until slightly soft. Remove and allow to cool.

In a mixing bowl, add the tuna and all the remaining ingredients. Mix and season with salt and pepper to taste.

To assemble, cut jalapenos in half and remove all seeds. Fill the peppers with the tuna mixture then place on a serving platter. Garnish with celery hearts and a drizzle of olive oil.
