Stuffed Jalapenos with Ocean Naturals® Albacore Solid Tuna

Ingredients

(Serves 2 – 4)

1 can Ocean Naturals® Albacore Solid Tuna in Olive Oil
4 Jalapenos
2 tbsp Olive Oil
2 tbsp Finely Chopped Red Onions
1 tbsp Fresh Lemon Juice
2 tbsp Mayonnaise
1 tbsp Chopped Pepperoncini
2 tbsp Chopped Celery Hearts

Instructions

Bring a pot of water to the boil, then add the jalapenos and boil for 2-4 minutes until slightly soft. Remove and allow to cool.

In a mixing bowl, add Ocean Naturals tuna and all the remaining ingredients. Mix and season with salt and pepper to taste.

To assemble, cut jalapenos in half and remove all the seeds. Fill the peppers with the tuna mixture then place on a serving platter. Garnish with celery hearts and a drizzle of olive oil.
