Potato Salad with Albacore Solid Tuna


(Serves 2)

1 can Ocean Naturals Albacore or Yellowfin Solid Tuna in Olive Oil
1.5 cup Quartered Red Potato (or any potato of your choice)
1 tbsp Red Wine Vinegar
3 tbsp Mayonnaise
2 tbsp Diced Red Onion
3 Belgium Endives
1 tbsp Dill


Preheat the oven to 325 degrees. Toss potatoes with salt and pepper and spread on a baking sheet. Bake for 15-25 minutes until tender and golden.

Allow potatoes to cool, then add them to a large mixing bowl along with the vinegar, tuna, mayonnaise, onion and dill. Toss and season to taste.

Place the endive leaves on a plate then arrange the tuna and potato mix on top.
