Mexican Style Queso Fundido with Ocean Naturals® Albacore Tuna Flakes with Jalapeno & Piquillo Peppers


Ingredients


(Serves 2)
Prep/Cook time: 20-30 minutes

1 jar Ocean Naturals® Albacore Tuna Flakes with Jalapeno & Piquillo Peppers in Olive Oil
1 cup Cheddar Cheese Shredded
1 cup Mozzarella Cheese Shredded
¾ cup Canned Black Beans
2 tbsp Queso Fresco
Cilantro Leaves for garnish
4 Corn Tortillas
1 Lime Cut in Half

Instructions


Pre-heat oven to 375F degrees.

In a 6 inch cast iron pan (or a small baking dish or sauté pan suitable for oven), layer half quantity of black beans, followed by half of the tuna, half cheddar and half mozzarella. Then, repeat the process for the next layer.

Now bake the dish 10-12 minutes until the cheese is completely melted. While the Fundido is baking, heat the tortillas.

When the Fundido is ready, remove from oven and top with cilantro, queso fresco and a squeeze of lime as desired. Serve along with the warm corn tortillas or corn tortilla chips for a sharable appetizer.
