Fettuccine with Zucchini and Ocean Naturals® Albacore Solid Tuna


(Serves 1-2)
Prep/Cook time: 25-35 minutes

1 can Ocean Naturals® Albacore Solid Tuna in Olive Oil
3 tbsp Extra Virgin Olive Oil
1.5 cup Zucchini Thinly Sliced
5 Whole Garlic Cloves Crushed
¼ tsp Red Chili Flakes
½ cup Marinara Sauce
¼ cup Italian Parsley
4oz Dried Fettuccine (pasta)


To start, bring a large pot of salted water to a boil.

Next, heat a large sauté pan on medium high heat. Once the pan is hot, add olive oil, zucchini, garlic and sauté until light golden brown. Once zucchini and garlic are caramelized, add parsley, chili flakes and marinara sauce then turn off heat.

Cook the fettuccine (pasta) per package instructions and set aside ½ cup of pasta water.

When the pasta is ready, add it to your pan of tomato sauce along with the ½ cup of pasta water. Turn the heat back on to medium setting, add Ocean Naturals tuna and gently toss all ingredients together. Once the sauce starts to simmer, turn off the heat. If your pasta sauce seems a little thick, add a splash more of water.

Add salt to taste and garnish with some fresh parsley and a drizzle of extra virgin olive oil.
